Cheesy Vegetable Muffins

These muffins are a great way to hide veggies from the kids. Quick and tasty!

Serves 12

Prep time: 15 mins


  • 2 cups grated veggies eg. Carrot, zucchini, potato
  • 1 1/2 cups plain flour
  • 3 tsp baking powder
  • 1 cup grated cheese
  • 2 eggs, lightly beaten
  • 1/3 cup olive oil
  • ½ cup milk
  • Salt and pepper


  • Preheat oven to 180°C
  • Grease a 12 hole muffin tin
  • Mix vegetables with ¾ of the cheese and the sifted flour and baking powder
  • Whisk together the eggs, oil and milk and add to the flour mixture
  • Stir to combine
  • Spoon mixture into the muffin holes, top with the remaining grated cheese
  • Bake for 25 minutes or until set and slightly browned
  • These muffins are tasty served warm. They are better eaten on the day they are cooked. Freeze any leftover muffins.
