These muffins are a great way to hide veggies from the kids. Quick and tasty!
Serves 12
Prep time: 15 mins
Ingredients
- 2 cups grated veggies eg. Carrot, zucchini, potato
- 1 1/2 cups plain flour
- 3 tsp baking powder
- 1 cup grated cheese
- 2 eggs, lightly beaten
- 1/3 cup olive oil
- ½ cup milk
- Salt and pepper
Method
- Preheat oven to 180°C
- Grease a 12 hole muffin tin
- Mix vegetables with ¾ of the cheese and the sifted flour and baking powder
- Whisk together the eggs, oil and milk and add to the flour mixture
- Stir to combine
- Spoon mixture into the muffin holes, top with the remaining grated cheese
- Bake for 25 minutes or until set and slightly browned
- These muffins are tasty served warm. They are better eaten on the day they are cooked. Freeze any leftover muffins.
